All Day Lemon Curd Tart

Last Saturday, I woke up and asked Sara the details of the wedding we’d be attending that day. “We should be there at 5:00,” she informed me. “And we have to bring something for the dessert potluck”. Oh. “Didn’t I tell you that before.” At that moment, I knew that I would make a lemon curd tart. It’s so easy, I thought. All I’ll need to do is throw some lemon curd in a tart shell.  I hopped out of bed and started making my tart. I finished with just enough time to hop in the bathtub and throw on my trusty green dress.

This is not the first time I’ve grossly underestimated the time required to make a dessert. Let this be a reminder to me that tart shells are a morning-long project in themselves and lemon curd takes about 40 minutes of stirring.  Also, this tart was delicious!

All Day Lemon Curd Tart

1 tart shell, fully baked (I used the Smitten Kitchen’s great unshrinkable sweet tart shell)
2 batches Warm Honey Lemon Curd (from Peter Berley’s Fresh Food Fast)
Fresh berries

Spread the lemon curd in the tart shell and garnish with berries. If your ingredients are pre-made, this will take approximately 2 minutes. If not, I’d give yourself a solid 5 hours (don’t worry, you’ll get to take breaks while the tart shell chills and freezes and bakes).

    I am not exaggerating! That is exactly how I remember it. I firmly maintain that you told me about the dessert on the morning of the wedding. We’ll just have to settle on multiple realities for this one.

    Megan- I don’t know if you remember me, but I was Allie’s roomate in college, and I saw her last weekend at GCC Homecoming. I mentioned following some food blogs and she directed me here.
