How I Spent My Summer Vacation
This summer I did very little besides work, homework, and some sleeping. I took two condensed classes which I followed with a minor breakdown and two weeks off before the start of fall semester. Enough about that, though. I kept a narrow grip on my sanity by trying to stay on top of my CSA (anyone want some peppers?). Here are a few highlights from the last couple months:
Peanut Tempeh Sandwiches
I made these for the 4th of July weekend and they were very good. I sliced up 1 package of tempeh, steamed it for a few minutes, then whipped up some peanut sauce and peanut slaw, and threw it all together on some New French bread.
2. Salads
We ate a lot of salads this summer because they’re fast and use up lots of veggies.
3. Blueberry French Toast
One of the most exciting events of my summer was a trip to the emergency room I took after cutting my finger while slicing the bread to make this Epicurious recipe. Huge thanks to Sara & Angie for driving me there & entertaining me during the 4 hours it took to get two stitches. Was the french toast worth it? Totally! A note if you decide to try it: I’ve never bothered to make the blueberry syrup to go on it because it’s super sweet already.
And now it’s my favorite season: Fall! In addition to the return of a slower, saner schedule, the weather here has already started cooling off enough for me to use the oven. More recipes soon.
